Chicken Nachos

Okay reader, today this post is going be a little bit shorter than the usual. Today after I came home I made myself a little snack. I just reheated the chicken I made for the quesadilla. For how to make it the chicken look back at my post on the quesadilla. All you need is some tortilla chips, either shredded cheese or nacho cheese, your chicken, and anything else u want on it. People put jalapeños, red peppers, and all kinds of crazy stuff. I personally am a meat and cheese kind of guy. All you do is get a plate, put your chips on it, a nice layer of cheese, and the chicken or whatever else on that you want.  Nachos are a really great quick snack for when you don’t have much time. Cooking is a great hobby; some would even say a sport, to get into. Every sport has their role models. Baseball has Babe Ruth and Hank Aaron. Cooking has Julia Child and Gordon Ramsay. Even if he can be a pain.

Chicken Quesadilla

                  Viva La Mexico! Hello readers and welcome to week two of our foods of the world trip. This week we were going to take a trip down to spicy Mexico. Mexico has a very rich and thick culture due to the long history of the area. Mexican culture goes all the way back to the Maya which was about 2000B.C. Not to mention that Mexico uses aspects of other cultures around it; such as, the many countries of South America, Spain, and  the good old U.S.A. For my first Dish of Mexico I decided to make a chicken quesadilla. It was delicious. First thing you have to do is, you have to make the chicken. The easiest way to do this would probably be to cut the chicken into small pieces and cook it in a skillet. Then you sauté the chicken in a little water and a packet of taco seasoning.  After that you get a tortilla, some non-stick cooking spray, and some shredded cheese. With a new skillet set at low heat, spray the pan with a thin coat of non-stick spray.  Then place your tortilla in the pan. Lay down a nice layer of the cheese on one side of the tortilla. Next depending on how much meat you want, place the chicken on the cheese on the tortilla. After that you need to sprinkle more cheese on top of the chicken. Don’t be shy I find the more cheese the better! Finally fold the empty side of the tortilla over. After the bottom of the one half is slightly browned you flip the quesadilla. After that side is browned you will have made yourself a gorgeous quesadilla. Keep reading guys! Next I’m feeling… Chicken nachos.

Orange Chicken

                       Hello readers!  Sorry that this entry is so late. A few nights ago I tried to make orange chicken from scratch, and it was a shocking success. I’m not doubting my cooking abilities, but by the end of this post you will understand what I meant by shocking.  This recipe was a total pain in the butt. Originally the recipe calls for a deep fryer. Don’t be discouraged if you don’t own one. All I used was a deep pot with a lot of oil; at the same time I was making the chicken I was also making the orange sauce which is was a challenge on its own.  The chicken I had to wing because the instructions on the recipe were very thin on the details of how to do any of this. I started with my chicken that I had cut up into bite size pieces.   With the chicken I took the small pieces and dipped them in an egg, salt, and pepper mixture.  After that I rolled the pieces in a flour and cornstarch blend. Fry in the oil until lightly browned. If they get too brown and the chicken will be over cooked. The orange sauce while it is cooking just looks like a blend of oil and spices. It looks like a bad vegetable soup.  Don’t be worried if it has a really strong smell. It is supposed to smell like that.  While stirring the fried chicken pieces in the orange sauce; they will attain their orange appearance. Final word of wisdom on the recipe is when it comes to using the orange zest only use a small portion of it. Once again readers I apologize on the lateness. Chow Mein

 



Hello readers and welcome to my blog. In this blog I will be showing you all new cultures and the foods that are inspired by them. Every week I will be making food from a different part of the world.  I’m going start this blog off in one of the oldest lands in history. A land that has been ruled by emperors for thousands of years. A land that is protected by a “Great Wall.” I’m talking about China of course. Chinese food has been very popular in the states within the last forty year . For my first dish to get into Chinese cooking I chose to make Chow Mein. For those of you that don’t know Chow Mein is a very simple pasta style dish that involves simple vegetables that can be bought at your local supermarket. When I first started I had no idea what I had got myself into. If you have never made Chinese food from scratch I would strongly advise getting your ingredients out and ready before you fire up the wok.  I started by chopping up my vegetables so that I would have them ready when needed to be. Then I cooked the veggies in a mixture of soy sauce and sesame oil. While this was going on I had my noodles boiling, but don’t let them boil for very long. Time may vary on brand but mine only took about three minutes. After my veggie mix had simmered and my noodles had run under cold water for about six minutes I threw everything together for an awesome combination of flavor. It was pretty good in my opinion and my family thought so too. For all of those cooks reading out there, if you are feeling a little adventurous you should try it. Go to www.food.com. Then search for “Panda Express Chow Mein.” Give it a try. You might like it. For all of those of you who don’t really cook. Give it a shot.
